the docs say:

Field used to identify the host running osquery: hostname, uuid.

Select either hostname or uuid for the host identifier. DHCP may assign variable hostnames, if this is the case, select UUID for a consistent logging label.

no indication is given about the "uniqueness" of the UUID, but i don't think it's wrong to assume that if we call it "UUID" it's "universally unique"
