Hi Fleet folks, was wondering if anyone had any examples of config that allowed your osquery client to communicate with the Fleetdm service via a proxy?

There's no need to do anything special with the config. You just need to make sure osquery can verify the TLS certificate. See
https://github.com/fleetdm/fleet/blob/master/docs/2-Deployment/FAQ.md#how-do-i-fix-certificate-verify-failed-errors-from-osqueryd
if you are having trouble.
