Is there an official upgrade doc for upgrading between kolide fleet and fleet dm?

There's no special upgrade path, it should work the same as any minor version upgrade has in the past. Check out https://github.com/fleetdm/fleet/blob/master/docs/1-Using-Fleet/7-Updating-Fleet.md for more.
