I would like to contribute to the project and to ease myself into it, I want to start by contributing to this issue/item if possible and would appreciate it if someone can direct me to contribution guidelines or process.

Hello and welcome! There aren't any written contribution guidelines. Essentially you just open a PR and we review/revise until it is considered up to the quality standards of the project. It can be helpful to discuss in an Issue or here in chat before implementing something to make sure it is a good fit for the project.

For that particular issue you could take a look at the linked Google Doc and start addressing some of the missing endpoints. Please drop a comment in the Issue so that we know which ones you are actively working on and don't duplicate work. You can copy the format of the documentation already available in https://github.com/fleetdm/fleet/blob/master/docs/api/rest-endpoints.md#change-password.

I would encourage you to submit a small PR (one, or a couple endpoints) first so we can make sure everyone is on the same page in terms of documentation, then if you are still excited we'd love to tackle as many of the endpoints as possible.
