how many machines are monitored for one kolide server node?

This depends on how many queries you have scheduled and the intervals that you set for host check in. Generally folks seem to have success up to a couple thousand hosts on one server.

@zwass does Kolide provide any documentation for system hardware requirements based X number of nodes? I know it’s hard to provide exact numbers based on the queries , check-in time, and etc but it would be nice to have a general idea.
